How do you store dairy at ambient temperature
i just do
Butter should have a hard outer rind like cheese that you have to scrape away
It needs to be on the fridge.
is that how cheese works i just throw it out when the outside gets hard or firm
counter top in a dish because i want soft butter, not butter which requires me to saw through it
Leave cheese in the window sill to soften that rind again.
Edit: this trick also works if you want a nice rind on top of your milk.

it depends on the type of cheese, soft cheeses should be thrown away but hard cheeses can have the outside scraped off since mold can’t get through it so easy
one stick of butter on the countertop for some fine soft butter the rest in the fridge
while butter is technically shelf stable i can not allow myself to leave it out of the fridge.
that being said i mostly use it for cooking anyways so its rare that i have to fight it to get it on a sandwich or something (i usually lose)
I just buy a whole brick of butter, get it soft in a metal bowl and add in things like garlic, herbs, spices, seasonings, etc. and then using a piping bag to make little cubes of compound butter. That stuff I put in the fridge like all butter.
